Edward Sylvester Morse, a zoologist from New England, was on a research trip to Japan in 1877, when he glanced out a train window passing through Ōmori station and made a major archeological discovery. The gentle lines of exposed white shells he observed became known as the Ōmori shell mounds, a discovery that launched the modern study of Japanese archaeology. Within the shell mounds were hidden artifacts documenting an era marked by the mastery of pottery and introduction of rice farming. Morse's keen observation while traveling changed the way that the Japanese studied their own history.
Inspired by Morse and his ability to find something new in an ordinary landscape, our Ōmori Nigori is a hand-pressed, unfiltered Sake that also carries the excitement of discovery. The creamy white layers hide surprises of sweet fruitiness and rich Yamada Nishiki rice.
